These are things like olive oil, safflower oil, and Crisco. As one can surmise from these examples, fatty oils can be liquid or solid at room temperature. In the world of aromatherapy, these fatty oils are more often referred to as carrier oils, as they are used to carry scented oils, like in a massage oil. When exposed to air, these oils turn rancid. The volatile oils are the scent molecules from the distilled material. These are called volatile oils because they begin to evaporate once exposed to air. This is why perfume has a limited life. A perfume does not turn rancid, but the scent potency will diminish over time. In the world of aromatherapy, these are known as essential oils, which is what we present on this page.
